No balsamic vinegar? Yes, you can use other vinegars; just expect a different flavor.

Bright greens and red strawberries come together in a whirlwind of color and flavor in this main-dish salad. From eatbetteramerica.

makes:4 servings
Strawberry Dressing
3tablespoons apple juice
2tablespoons strawberry spreadable fruit
2tablespoons balsamic vinegar
Salad
1lb boneless skinless chicken breasts
8cups bite-size pieces spinach
1cup fresh strawberries, stems removed and strawberries cut in half
3tablespoons crumbled Gorgonzola cheese
2tablespoons chopped walnuts
1.In small bowl, mix all dressing ingredients until blended; set aside.
2.Spray 10-inch skillet with cooking spray; heat over medium-high heat. Cook chicken in skillet 15 to 20 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F). Remove chicken to cutting board.
3.Add dressing to skillet; stir to loosen any pan drippings.
4.Cut chicken into slices. Among 4 plates, divide spinach. Top with chicken, strawberries and cheese. Drizzle with dressing. Sprinkle with walnuts.

Delicious
What a tasty salad!!! The strawberries went well with the spinach...we used crumbled blue cheese b/c I never tried gorgonzola and I'm kind of picky about cheese. We also left out the walnuts. I know this is something that will be made again and again!!!

Yum
Strawberries are in season and when you have so much of them, i want to use them for more than desserts. This is a very tasty and a good combination of tastes, textures and colors. Unfortunately, i used can chicken and did not have apple juice so i made my own sweet dressing which was very good. I will try it just the way it was written next time.

I didn't have the the chicken on hand so i just had the fruit and veggies, and I had blue cheese instead of gorgonzola - SO GOOD! Especially the dressing, I will continue to make this.

My husband and I loved this salad! It was very easy to make and tasted great. I used fat free feta cheese as I couldn't find the garganzola. I'm not a big nut fan so I omitted them. Didn't miss 'em.
