    Don't know if anyone is still on this thread, but I didn't see that anyone is shopping at the Farmers' Markets in their areas.  You can score totally great veggies straight from the farmers. You can even try things you've never seen before, just ask the farmer what to do with it, it can really make it exciting to be a vegetarian. As for cookbooks, the Tassajara Cook Book is lovely, and simple.  Check out cookbooks from Buddhist monasteries, retreats, etc.  The recipes are usually quite good and very simple to prepare so you don't end up losing interest or nutrients in the process.

    Thanks for the great ideas, but where did you get your recommendation on the amount of fiber you should consume each day?  Everything  I've read puts it at between 21 and 30 grams per day, with about 25 being optimal for women.  But I guess if you go at it in an incremental increase and watch which kind of fiber you are getting, soluable or insoluable and in what proportions, and taking in a lot of fluids...  Oh, and the American Dieteic Association said that the intake of over 50 to 60 grams of fiber can block the absorption of some nutrients...aaarrrggghhh!  I guess I need to keep checking this out before I go much beyond 25 to 30gm on a daily basis.  Thanks for your list, though.
