Could exercise cause my appetite to increase?

It depends on how long and how intensely you exercise. Short-term, high-intensity exercise (such as sprinting up stairs for 10 minutes) tends to suppress your appetite afterward. Longer, more moderate exercise (such as jogging or cycling for a half hour or longer) will tend to increase your appetite. Once you finish one of these longer, less intense activities, you'll likely feel hungry. Your body is actually telling you what you need, and the best thing to do immediately afterward is to grab something healthy to eat. Some people will finish exercising, take a shower, change clothes, and wait an hour or two before eating. By then, you'll absolutely be ravenous and more likely to overeat. When you eat after exercise, select foods wisely. Look for foods that combine carbohydrates and protein to help your muscles recover and keep you from feeling overly hungry. Try something like a salad with cottage cheese or yogurt or a turkey sandwich on whole-grain bread as post-work-out meal options.
