Holly Clegg, Responds:
Holly Clegg, national spokesperson for the Louisiana Sweet Potato Commission and cookbook author, responds: The sweet potato not only is a good source of fiber but also low in fat and sodium. This naturally sweet vegetable is loaded with vitamin A, potassium, vitamin C, and manganese and provides a good source of vitamin B6. To enjoy the sweet potato, you can bake, saute, grill, stir-fry, steam, boil, or roast it in everything from savory to sweet dishes. Here are a few ideas to get you started.
Try oven-baked sweet potato fries when you crave french fries.
Roast sweet potatoes in the oven with other potatoes and vegetables; sprinkle with herbs and drizzle on olive oil.
Bake one into cranberry bread, or make sweet potato biscuits or pie.
Add sweet potatoes to soups and casseroles, or mash them up and hide them in meatballs or meat loaf.
Bake a sweet potato, cool it, wrap it in foil, and freeze, and it's ready for recipes later.
