Freezing food is a triple play—you can save money, energy, and time. You can freeze just about any recipe. But watch out for cottage cheese, custards, recipes containing mayonnaise, and fruits and vegetables with a high water content—they don’t freeze well. Here are a few other hints to get you started:
- Preserve freshness by selecting only fresh high-quality ingredients.
- Freeze promptly when the food reaches room temperature.
- Store food in containers or zip-lock bags marked freezer safe. Air and moisture can cause freezer burn, and without the proper containers, your food will lose flavor color, moisture, and nutritional value.
- Don’t put a cold glass dish into a hot oven—the temperature change could cause the dish to break.
